Primal Cucumber Tomato Salad

Garden Season is upon us! Here in Wisconsin its still a bit early for the majority of produce to be in season yet but, it lies very close in front of us! A very exciting time of the year! Not only can we take advantage of our “NOW” when lots of garden and wild edibles are ready, but its also a time to start to preserve and pack away all of the good food and nourishment that is in abundance around us.

I have been making this healthy and delicious vegetable salad dish for a few years now. Its great to make when most of the items are in season. Just go to the garden and grab the goodies! This is a great dish to take to any picnic or gathering. I also love to have a big dish of it in the refrigerator, ready to grab. It goes great as a side dish to so many things or us just a great snack in between meals! Hope you love this dish!

Ingredients

  • 2 cups grape or cherry tomatoes (or any meaty tomato)
  • 2 cups chopped and peeled cucumber chunks
  • 1 clove of fresh garlic, minced
  • 1 cup kalamata olives, pitted
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp chopped fresh oregano
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1 tsp black pepper or pepper to taste

 

Directions

Wash and peel cucumbers. Chop into small chunks. Wash tomatoes and slice in half. Chop your herbs and mince your garlic. Toss all of your goodies with the olives in a medium to large bowl.

Combine olive oil, balsamic vinegar and pepper in a small bowl and whisk together. Drizzle over your bowl of other ingredients.

Toss well! Refrigerate any leftover.
