Primal Breakfast Bake

Weekends= cooking!

Who am I kidding?! Im cooking ALL the time! However, on my weekends I’m cooking mass amounts of food. Yes, because I have a family of four and Yes, because I have a 15 year old that eats enough food for five people alone! And Yes, because on the weekends I do batch cooking to have meals ready to grab and go for the rest of the busy week. I do love cooking good food! That’s life. If you are living a healthy whole foods life, cooking is a must! The less you are cooking, the more processed foods you are probably consuming.

When its time to get busy in the kitchen, I always take requests from the boys but in general, I know what everyone likes. One key to keeping myself and my family eating healthy and loving what we eat is variety. Making new concoctions is fun for me. When I do that, I usually start by making the base ingredients something that we provide ourselves. This recipe that Im sharing with you is just that. Some of the ingredients are purchased but we grow and keep our own potatoes and have our own flock of laying hens. This recipe is so easy to whip up and loved by even the pickiest eaters! INGREDIENTS

  • 2 Tablespoons fat (butter, animal fat, lard, coconut oil)
  • 1 large potato of choice (sweet potato, yam, red potato, white potato)
  • 1/2 teaspoon sea salt
  • 1 & 1/2 #’s bulk ground sausage, free range, healthy quality meat is the best
  • 1/2 large onion, diced (red, white, yellow, doesn’t matter)
  • 2 cups chopped spinach or kale
  • 10 eggs, whisked
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon dried oregeno

 

DIRECTIONS

Preheat the oven to 400 degrees. Toss your cubed potatoes with whatever fat you decide to use, then salt them. Place your potatoes on a baking sheet and bake for appx 25 minutes or until soft.

While your potatoes are roasting, place your sausage and onions in a large skillet over medium heat and cook until meat is no longer pink.

Place your meat mixture in a lightly greased baking dish, add potatoes, eggs, spinach and seasonings. Mix it all up until its well combined. Bake in the oven for 25 to 30 minutes or until the eggs in the center of the dish are set up.
