Cranberry Vanilla Paleo Granola

This recipe has been a favorite in our house for about a year now so its time to put my recipe out there! The great thing about this is that so many of the ingredients can be swapped out for similar items that you have in your cupboard or are your favorites. The sweet crunchy glaze of this granola makes it “OH SO ADDICTING” It disappears fast around here!

  • This recipe is grain free, gluten free, sugar free and dairy free
  • Use organic ingredients whenever possible

Ingredients

  • 2 cups slivered almonds
  • 1 cup chopped pecans
  • 1 cup sunflower seeds or you could use pumpkin seeds
  • 1 cup unsweetened shredded coconut
  • 1/4 teaspoon sea salt
  • 2 tablespoons coconut oil, melted
  • 4 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries or raisins or dried cherries

Instructions

Preheat oven to 300 degrees. Combine nuts, seeds, coconut and salt in a large bowl. In a small bowl combine coconut oil, honey and vanilla and stir into nut mixture until well combined. Baked on a parchment lined, lined cookie sheet for 20 to 25 minutes or until lightly browned. Add the dried cranberries after baking and toss to combine. Cool completely before serving.

This recipe can be eaten dry as a snack or with milk or almond milk added as a cereal. Its amazing both ways. As far as storage, store in an airtight jar for up to a week.
