Homemade Healthy Mayonaise
I recently completed a 21 day sugar detox and made LOTS of new recipes while I was doing it. Not only did I love them, but so did my family! Thats a huge success! They were simple, quick, healthy and delicious! This recipe was not one of my own creations, it came from Diane Sanfilippo’s book, “21 Day Sugar Detox” I highly reccomend the book, the detox and the recipes! Start by adding this one into your food plan and never buy store bought mayo again!
Healthy Homemade Mayonnaise
Ingredients
- 2 egg yolks
- 1 Tablespoon fresh lemon juice
- 1 teaspoon gluten free Dijon mustard
- 1/2 cup macadamia nut oil or other nut oil (I used walnut oil)
- 1/4 cup extra virgin olive oil
Directions
In a medium sized mixing bowl, whisk together the egg yolks, lemon juice and mustard until blended and bright yellow, about 30 seconds.
Begin adding 1/4 cup of the macadamia nut oil (or other nut oil) to the yolk mixture a few drops at a time, whisking constantly. Gradually add the remaining 1/4 cup macadamia nut oil and then the olive oil in a slow, thin stream, whisking constantly, until the mayonnaise is thick and lighter in color.
Store in the refrigerator for up to a week.
