Maple Glazed Pecans in a Crock Pot

GOOD LORD! This recipe was a brainstorm, a great idea, a terrible idea, yes, all of that!

So, the inspiration for this recipe came from Gavin and Dans recent trip to Miller Park. Last Sunday Gavin and Dan went to MIlwaukee to a Brewers game. Upon returning home I was checking in with Gavin to see how the game went, how the weather was, what he ate, what he bought. Just getting the details of his day. Its easy to drop $20 at a ball game and he informed me that he couldn’t pass up the $7 small serving of sugary nuts they were selling.

This time of year my mind is in high gear with thoughts of “food” and “new ideas” and “what to put in the school lunch bags”. So with my mind on school lunch ideas and snacks and Gavin’s love for these nuts, I was inspired to make a great paleo, healthy, version of these “too good to pass up” nuts! And I was thinking crock pot because Im not really cooking, but feel like I am! You know, the crockpot feels a lot like the wash machine to me. Throw stuff in. walk away. come back later. you didn’t really do much. but it seems like you did! Yep! Love the crock pot!

So, here’s what I did!

Ingredients

  • 3 cups raw pecans, or any nut for that matter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • seeds from one whole vanilla bean
  • 1/2 teaspoon sea salt
  • 1 tablespoon coconut oil or grassfed butter would probably work

Directions

Easy Peasy! Put all of your ingredients in your crockpot and stir well. Put the lid on and cook on low for 2 and a half hours. Stir several times an hour. They may scorch if you don’t stir a few times. Plus stirring helps keep them evenly coated. Put them on a cookie sheet or plate to cool. Store them in a jar or airtight container and try not to eat the whole batch! That’s the work with this recipe!

These can be great for SOOO many things! They would make a great snack, dessert, appetizer, party finger food, put them on yogurt, on a salad. They would also make a great gift!!!!

PS. That was a good game all the way around. I received inspiration for a new recipe and Gavin caught a baseball at the game!
