The BEST EVER Jalapeno Poppoers

These things are the best for several reasons! They are Easy! Delicious! And all whole foods! The inspiration for making these came from having a HUGE overabundance of jalapenos this year. The last two summers I could not freeze enough to get through the winter and I think we have 8 plants this year and each plant is yielding huge amounts! Its all good but anyone whom knows me well, knows that it kills me to let anything go to waste.

So, while mulling over ideas of ways to use these I thought about jalapeno poppers, but doing it my way, of course. No breading, only whole food ingredients, no deep frying, which is not possible since I proudly don’t own a deep fryer. I LOVE goat cheese so that was a quick and easy “yes” to use as the filling, and for the wrap, who doesn’t love bacon?! That seems easy enough to me, so I threw things together and the turn out was out of this world! Gavin and Draven were in total agreement! In fact, we have made these two days in a row now!

Ingredients

  • 12 fresh jalapenos
  • 4 oz package of plain cheve goat cheese, organic if possible
  • 4 to 6 strips of bacon, uncured, free range if possible.

For my ingredients, I use only the best untained ingredients. Any of my followers know that by this point. Our peppers are organic. Also, if you are local and need organic jalapenos, our peppers are sold at Driftless Edibles in downtown Prairie du Chien. Also, the goat cheese and the bacon that I used for this recipe were from there as well!

Directions

Preheat oven to 400 degrees. Take goat cheese out the refrigerator to soften up a bit. Cut the tops off of peppers and sliced them in half long ways. Take a spoon and scape out all of the seeds.

You may want to use a glove when doing this. I did not and my hand burned for about 24 hours after that. Oops!

Once halves are cleaned out, take your spoon and fill them level full with goat cheese.

I then take my thawed bacon and wrap it around the pepper. I use anywhere from a half to one third of a piece of bacon for each pepper. Then place them on a cookie sheet line with aluminum foil.

Bake for appx 30 to 40 minutes, depending on how crispy you want the bacon. Let them cool for 5 to 10 minutes! ENJOY!! These lil suckers are awesome! They would make a great appetizer for company or just as a fun finger food to have for the family!
