Caveman Coleslaw

At our home, our meals are centered around PROTEIN and PRODUCE. I am always excited to come up with different ways to serve fruits and vegetables. The key to preventing boredom and staying successful with creating healthy and supportive meals is to always be trying something new!

I often think of creamy side dishes such as cole slaw, potato salad, seafood salad, etc as not a good whole food choice. And for the most part, that is true. One day I started to think about cole slaw and what generally goes into it. A light bulb came on and i realized that I could totally make a cole slaw recipe that was from whole foods! A truly healthy way to get your vegetables in! So, here goes! Gavin really liked this recipe too!

Caveman Coleslaw

Ingredients

  • Always use organic ingredients whenever possible
  • 1/2 head green cabbage (or one whole one if you omit the purple)
  • 1/2 head purple cabbage
  • 2 cups shredded carrots
  • 1/4 cup white vinegar or apple cider vinegar
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dry mustard or 1 teaspoon yellow prepared mustard
  • 1 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/2 cup homemade paleo mayonnaise (click here for my recipe!)

Dice or shred your cabbage. Place it in a large bowl and add your shredded carrots. Mix well. Add in the vinegar and mayo and mix well. Add in all of the seasonings. You can add more or less to taste. Mix well.

This can be served right away but if you cover it and refrigerate it for at least an hour, it will help all of the flavors meld!

The key to keeping this healthy is making and using your own healthy homemade mayo!!
