Healthy Whole Food Pie Crust

Gavin loves pies. He often asks me why I don’t make pie more often. I think my main reason has been because pre made gluten free pie crusts are so expensive. Also they have ingredients in them that are far from healthy or paleo friendly. I have just needed to carve out the time to do some experimenting in the kitchen and come up with a healthy crust and one that my family approves of in the taste department. Alas, the time has come.

I will share my perfected recipe! Dan’s comments on this crust were “That’s way better than I expected” and Gavin’s was “that crust is awesome” and Draven just loves everything I cook him no matter what!

Ingredients

  • 2 cups almond flour
  • 1/4 teaspoon sea salt
  • 2 tablespoons coconut oil, melted
  • 1 large egg, room temperature
  • 1/4 teaspoon vanilla extract

Directions

Combine flour and salt in a food processor and pulse a few times to mix it up. Add the coconut oil and the egg and pulse until the mixture forms a ball.

Press the dough into a glass 9 inch pie plate.

If your pie recipe calls for a pie shell to be pre baked, bake it 9 to 11 minutes in the oven at 350 degrees. This crust can be used with any pie recipe of your choice! Stay tuned, I’ll post my own filling recipe soon!
